Ingredients

6 -8 small flour tortillas or 6 -8 small corn tortillas
1 lb cooked shrimp ( no shell or tail )
2 limes , juice of
2 tablespoons tequila ( optional )
1/4 teaspoon cumin powder
1/2 teaspoon red pepper flakes
2 garlic cloves ( chopped )
fat-free refried beans , 1 can
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
guacamole ( see the recipe i 've posted )
pico de gallo ( see the recipe i 've posted )
Tostadas are a popular Mexican dish that usually consists of a fried or toasted tortilla topped with beans, meat, and vegetables. In this variation, we are using shrimp as the protein and adding some tequila and spices to give the tostadas an extra kick. The result is a delicious and filling dish that can be enjoyed as an appetizer or a main course.

Instructions

1.Preheat oven to 375°F.
2.Arrange tortillas on a baking sheet and bake in the oven for 8-10 minutes until crispy and golden brown.
3.In a bowl, mix the cooked shrimp, lime juice, tequila (optional), cumin powder, red pepper flakes, and garlic.
4.Warm the refried beans in a saucepan over medium heat.
5.Spread the refried beans on the tortillas, then top with the shrimp mixture.
6.Sprinkle shredded cheddar and monterey jack cheese on top of the tostadas.
7.Return the baking sheet to the oven and bake for an additional 3-5 minutes until the cheese is melted and bubbly.
8.Serve the tostadas hot with guacamole and pico de gallo on top.
