Ingredients

1 beef tenderloin , trimmed
1 onion , quartered
3/4 cup Burgundy wine
3/4 cup dry sherry
2 bay leaves
1 package fresh mushrooms , fine chop ( 3 cups )
1 large leek , chopped
2 tablespoons butter
1/4 cup unseasoned dry breadcrumbs
1/2 cup butter
3/4 lb chicken liver , quartered
1 clove garlic , crushed
1/3 lb bacon , diced
2 tablespoons brandy
1/2 teaspoon salt
2 -4 drops hot pepper sauce
1 package frozen puff pastry sheet , thawed
1 egg , beaten
Scrumptious Beef Wellington is an impressive dish that originated in England over 200 years ago. Beef Wellington was named after Arthur Wellesley, the first Duke of Wellington. This dish is traditionally made with beef tenderloin, mushrooms, liver pâté, and puff pastry. It is perfect for a special occasion or a dinner party. The combination of savory meat and rich mushroom pâté wrapped in flaky puff pastry is sure to impress all your guests! Instructions

1.Preheat oven to 400°F.
2.Place onion and beef tenderloin in roasting pan. Bake uncovered 25-30 minutes or until meat thermometer reads 140°F-150°F; remove from oven, pour wine over beef and let stand 15 minutes.
3.Meanwhile, in medium saucepan, stir together sherry, bay leaves, mushrooms and leek. Cook until liquid is almost evaporated. Remove bay leaves.
4.In large skillet, melt 2 tablespoons of the butter. Add breadcrumbs and cook until golden. Add the mushroom mixture and cook, stirring occasionally, until mixture is browned and dry.
5.In large skillet, melt remaining 1/2 cup of butter over medium heat. Add chicken livers and garlic. Sauté until cooked through.
6.In processor or blender, puree the chicken liver mixture, bacon, brandy, salt and hot pepper sauce, until just smooth.
7.Lay out puff pastry and spoon chicken liver-mushroom mixture down center. Place beef on top of this mixture. Fold puff pastry around beef and seal edges. Place on baking sheet and brush with beaten egg.
8.Bake in preheated oven for 10 minutes. Reduce heat to 350°F and continue baking for 30-35 minutes longer or until golden brown and crispy.
