Instructions

.In a large skillet, cook the bacon over medium heat until crisp and browned. Remove from skillet and set aside on paper towels to soak up excess grease.
.In a small bowl, mix together the sour cream and chopped chipotle chiles in adobo.
.In the same skillet as the bacon, add the thawed corn kernels and cook until lightly browned and crispy, about 5 minutes. Add the thinly sliced red bell pepper and sprinkle with salt and pepper to taste. Cook for another 2-3 minutes until the peppers are slightly softened.
.In a separate bowl, beat the eggs with a whisk or fork. Pour the eggs into the skillet with the corn and peppers. Scramble the eggs until cooked through and fluffy.
.Warm the flour tortillas in microwave or oven for about 30 seconds.
.To assemble the burritos, spread a spoonful of the chipotle sour cream onto each tortilla. Spoon the scrambled eggs over the top, followed by the crispy bacon and shredded cheddar cheese. Sprinkle with fresh cilantro leaves before rolling up the tortillas into burritos.
