The Scottish style roast chicken with oat stuffing (also known as howtowdie) is a traditional Scottish recipe that has been passed down through generations. It is a dish that is meant to be shared with loved ones during special occasions like Christmas or Hogmanay (New Year's Eve). The stuffing adds a nutty and slightly sweet flavor to the chicken while also keeping it moist and tender. This dish is usually served alongside roasted root vegetables like carrots, potatoes, and parsnips. Perfect for a cozy family dinner or a hearty Sunday lunch.

Instructions

1.Preheat the oven to 350°F.
2.In a medium saucepan, cook the chopped onions in the butter until the onions are tender.
3.Add the oats, salt, pepper, coriander, and nutmeg. Cook the mixture, stirring occasionally, for about 3 minutes or until the oats are lightly toasted.
4.Rinse the chicken and pat dry with paper towels. Loosely stuff the chicken with the oat mixture. Secure the openings with toothpicks or a skewer.
5.Brush the chicken with melted margarine or butter. Place the chicken in a roasting pan and add the halved onions around the chicken.
6.Roast the chicken for 1 1/2 to 2 hours or until the internal temperature of the chicken reaches 165°F. Let the chicken rest for 10 minutes before removing the stuffing and carving.
7.Serve hot with your favorite sides.
