1 envelope gelatin
1/2 cup sherry wine
1 1/2 cups light cream
1/4 cup sugar
1 teaspoon vanilla extract
2/3 cup apricot jam
toasted almond ( optional )

Instructions

1.In a small bowl, sprinkle gelatin over sherry and let stand for a minute.
2.Place the bowl in simmering water and stir until gelatin is completely dissolved.
3.In a separate bowl, combine cream, sugar and vanilla extract, stirring until sugar dissolves.
4.Gradually stir in gelatin mixture.
5.Pour the mixture into dessert glasses. Chill for at least four hours or until set.
6.In a small saucepan, melt apricot jam on low heat.
7.Spoon warm apricot jam over the set creams.
8.Top with toasted almond and serve.
