Ingredients

2 cups whole wheat flour
1 cup bread flour or 1 cup unbleached all-purpose flour
1/2 cup rolled oats ( divided )
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons butter , melted
1 1/2 cups buttermilk
melted butter , for top of hot loaf
Scottish soda bread is a staple in many households in Scotland and Ireland. This bread is traditionally made without yeast, which means it can be made quickly and easily. Instructions

1.Preheat the oven to 425 degrees Fahrenheit.
2.In a large bowl, mix together the whole wheat flour, bread flour or unbleached all-purpose flour, 1/4 cup of rolled oats, baking powder, baking soda, and salt.
3.Add 3 tablespoons of melted butter and the buttermilk to the dry ingredients and mix until just combined.
4.Shape the dough into a round loaf and place it on a baking sheet or in a cast iron skillet.
5.Score the top of the dough with a deep 'X' and sprinkle the remaining rolled oats over the top.
6.Bake for 30-35 minutes or until the top is golden brown.
7.Brush with melted butter and let it cool before serving.
