1/3 cup bacon drippings
2 cups chopped onions
1 egg
1 cup milk
2 cups quick-cooking oats
1/4 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon sage

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Melt bacon drippings in a skillet over medium heat. Add onions; cook and stir until golden brown, about 10 minutes. Remove from heat and cool.
3.Whisk egg and milk together in a bowl until smooth. Mix oats, flour, baking powder, salt, and sage in another bowl.
4.Stir onion mixture and milk mixture into flour mixture until just combined. Pour batter into a 9-inch round cake pan.
5.Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes.
6.Serve hot or cold.
