1 cup butter , at room temperature | |
1/3 cup superfine sugar | |
1 cup unbleached all-purpose flour , sifted | |
1/3 cup fine semolina flour |
1. | Preheat oven to 170°C. |
2. | In a bowl, cream butter and sugar until light and fluffy. |
3. | Gradually add in flour and semolina until dough is formed. |
4. | Roll dough into small balls and press down onto a lined baking sheet. |
5. | Prick the shortbread all over with a fork. |
6. | Bake for 25-30 minutes or until golden brown. |
7. | Cool on a wire rack before serving. |
