Ingredients

225 g self-raising flour
good pinch mustard powder or cayenne pepper
100 g butter
200 g cheddar cheese , grated
3 spring onions , trimmed and finely chopped
2 small eggs or 1 large egg , beaten
2 -4 tablespoons buttermilk or 2 -4 tablespoons plain yogurt
Scottish Cheddar Cheese and Spring Onion Tea-Time Scones are a traditional Scottish delicacy that have become a popular teatime treat in many parts of the world. Instructions

1.Preheat your oven to 220°C /200°C fan/gas mark 7.
2.Mix the flour and mustard powder or cayenne pepper together, then use your fingers to rub in the butter until the mix resembles fine breadcrumbs.
3.Mix in 150g of the cheddar and all of the spring onions.
4.Stir in enough beaten egg and buttermilk or yogurt to bring everything together into a soft, but not sticky dough. You might not need all the liquid, or you might need an extra splash.
5.Lightly flour your work surface and tip the dough out onto it. Flatten it with your hands to a thickness of about 2cm. Cut out six or seven 6cm-wide circles and transfer them to a nonstick baking sheet.
6.Brush the tops with the rest of the beaten egg, scatter over the remaining cheese and bake for around 12–15 minutes, until golden brown and cooked through.
7.Remove the scones from the oven and allow them to cool on a wire rack. Serve them with butter if you like.
