Ingredients

1 lb white potato ( or Russet , Idaho , etc . )
14 ounces savoy cabbage
sea salt
fresh ground black pepper
6 green onions , minced
2 tablespoons butter
2 tablespoons half-and-half ( or whole milk )
1/4 cup cheddar cheese ( I like extra sharp )
1/4 cup parmesan cheese , freshly grated
4 eggs ( optional )
Scottish Borders Rumbledethumps is a traditional Scottish dish that originated in the Scottish Borders region. It is a simple and flavorful dish made with potatoes, cabbage, and cheese. This dish was created as a way to use up leftover potatoes and cabbage and has now become a staple in Scottish cuisine. The name 'Rumbledethumps' comes from the sound the dish makes when it is being stirred and mashed together.

Instructions

1.Peel and chop the potatoes into large chunks.
2.Rinse and chop the savoy cabbage.
3.Boil the potatoes and cabbage together until soft.
4.Strain the vegetables in a colander until all the water is removed.
5.Mash the vegetables with a potato masher or fork.
6.Mix in the minced green onions, butter, half-and-half, cheddar cheese, and parmesan cheese.
7.If desired, crack 4 eggs over the mixture and bake for an additional 15-20 minutes at 375°F.
8.Serve and enjoy!
