Ingredients

225 g shortcrust pastry
140 g mixed dried fruit
50 g butter
50 g dark brown sugar
25 g walnuts , chopped
25 g glace cherries , chopped
1 egg , beaten
110 g icing sugar
1 tablespoon lemon juice
Scottish Border Tart is a mouth-watering dessert made with a mixture of dried fruit, nuts, cherries, and a sweet glaze topping, all on a bed of a buttery shortcrust pastry. It has a chewy texture and delicious taste that will satisfy your sweet tooth. However, keep in mind that this dessert is high in sugar and fat, so it's best enjoyed in moderation.

Instructions

1.Preheat oven to 180°C/ gas mark 4.
2.Roll out the pastry to a thickness of around 0.5 cm and line a 20.5cm tart tin. Trim the edges.
3.Mix the dried fruit, walnuts, dark brown sugar and cherries together and then scatter over the base of the pastry.
4.Melt the butter in a saucepan and mix in the beaten egg. Pour this over the dried fruit and smooth over the surface.
5.Bake in the oven for 30-35 minutes until the surface is golden brown.
6.Mix the icing sugar and lemon juice together until smooth and spoon over the top of the baked tart. Leave to cool and serve.
