Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.Cook bacon slices in a pan over medium heat until they are slightly browned. Remove them and chop them into small pieces.
3.In a separate bowl mix onions, vegetables, rice, shrimp or chicken and thousand island dressing. Mix well.
4.Coating the inside of a casserole dish with baking spray, add mixture to the dish and put the bacon on top..
5.Cover with foil and bake for 45 minutes.
6.Remove foil and bake for another 15 minutes, or until the dish's bacon and top layer become brown and crispy.
