2 slabs baby back pork ribs
coarsely ground black pepper
1 tablespoon ground red chile pepper
2 1/4 tablespoons vegetable oil
1/2 cup minced onion
1 1/2 cups water
1/2 cup tomato paste

2 1/2 tablespoons honey
2 tablespoons Worcestershire sauce

1/4 teaspoon paprika

Instructions

1.Preheat grill to 275 degrees F (135 degrees C).
2.Mix black pepper and 1 tablespoon ground red chile pepper together in a small bowl; rub over entire surface of ribs.
3.Heat vegetable oil in a large stock pot over medium-high heat.
4.Cook and stir onion in hot oil until browned, 5 to 7 minutes.
5.Add water, tomato paste, white vinegar, brown sugar, honey, Worcestershire sauce, salt, 1/4 teaspoon pepper, liquid smoke, whiskey, garlic powder, paprika, onion powder, dark molasses, and 1/2 tablespoon ground red chile pepper; stir until well combined.
6.Place ribs in the stock pot, bone-side up, and cover with sauce; reserve remaining sauce. Bring to a boil.
7.Reduce heat to medium-low and simmer until meat is tender and falling off the bones, about 2 hours.
8.Remove ribs from sauce and shake lightly to remove excess sauce.
9.Transfer ribs to the preheated grill, bone-side down.
10.Baste the top of each slab with reserved sauce.
11.Grill ribs until sauce is sticky and caramelized, about 15 minutes. Flip and baste the other side; grill until caramelized, about 10 minutes more. Allow to cool for a few minutes before slicing and serving.
