Ingredients

4 duck eggs , at room temperature
6 good-quality pork sausages
1/2 tablespoon finely chopped sage
1/2 tablespoon finely chopped parsley
4 tablespoons plain flour
1 egg , beaten
100 g breadcrumbs
peanut oil ( for deep frying )
brown sauce or ketchup , to serve
Scotch Duck Eggs are a traditional British picnic food, made by wrapping a boiled egg in sausage meat, coating it in breadcrumbs and frying. The creamy yolk of the egg is surrounded by a layer of softened, lightly seasoned pork sausage, which is then breaded and deep-fried. It can be served hot or cold and is a favorite as a snack or for breakfast, especially on weekends.

Instructions

1.To make the Scotch Duck Eggs, first boil the duck eggs in a pot of water for 6-7 minutes until they are hard-boiled. Once done, run them under cold water to chill and peel them.
2.Mix the sausages, sage, and parsley in a bowl, and divide into 4 equal portions.
3.On a flour-dusted surface, pat each sausage mixture into a 1/4 inch thick round, then put an egg on top and gently shape the sausage meat around the egg to completely cover it.
4.Dust the Scotch Duck Eggs with flour, then dip into beaten egg and coat in breadcrumbs. Return to the egg and crumbs to double coat them well.
5.Heat the peanut oil in a large deep pan and drop the Scotch Duck Eggs in carefully, cooking for 6 minutes until the breadcrumbs turn golden brown. Using a slotted spoon, remove them from the oil and drain on kitchen paper.
6.Serve the Scotch Duck Eggs with brown sauce or ketchup.

PROS

Crispy and crunchy on the outside, juicy and soft on the inside, a perfect appetizer or snack.

CONS

Deep-frying makes them a little unhealthy if taken on a regular basis.
