Ingredients

2 lbs pork hocks
pepper
salt

20 g lard
1 onion
1 bay leaf
1 tablespoon juniper berries
1/2 tablespoon clove
1 tablespoon mustard seeds
1/4 quart water
1/8 quart beer
2 tablespoons cornstarch

Instructions

1.Preheat oven to 350°F.
2.Cut onion into quarters.
3.Heat lard in a large skillet over high heat.

5.Sear pork hocks in skillet until brown on all sides.
6.Transfer pork hocks to baking dish.
7.Add onion, bay leaf, juniper berries, clove, and mustard seeds to the skillet where pork hocks were cooked.
8.Cook for 1-2 minutes until onions have softened.
9.Add water and beer to the skillet and bring to a simmer.
10.Pour skillet mixture over the pork hocks in baking dish.
11.Cover baking dish with foil and bake in preheated oven for 2-2.5 hours.
12.Take baking dish out of the oven and carefully transfer pork hocks to a plate.
13.Mix cornstarch with 1/4 cup water and add to the skillet with the remaining liquid from the baking dish.
14.Cook over medium-high heat until thickened.
15.Pour thickened sauce over the pork hocks.
16.Serve hot.
