1/2 cup light brown raw sugar ( demerara ) or 1/2 cup turbinado sugar ( brand Sugar in the Raw )

Schnecken is a traditional German sweet bread made with a rich yeast dough, cinnamon, and nuts. The word 'schnecken' means 'snail' in German, which refers to the shape of the spiral rolled dough. Instructions

1.In a large bowl, whisk together the bread flour, sugar, salt, and yeast.

6.While the dough is rising, prepare the sticky topping. Melt 1/2 cup butter in a saucepan over medium heat. Add the turbinado sugar, maple syrup, and corn syrup, stirring until smooth. Remove from heat and stir in the walnut or pecan pieces.
7.Preheat the oven to 350°F (175°C) and butter a 9-inch round cake pan.
8.On a floured surface, roll out the dough into a rectangle about 10x14 inches and 1/4 inch thick.
9.Brush the dough with the beaten egg and sprinkle with cinnamon and both sugars.
10.Starting at the longer edge, roll up the dough like a jelly roll and cut into 12 equal pieces.
11.Pour the sticky topping into the prepared cake pan, spreading it out evenly.
12.Arrange the dough pieces in the cake pan, cut side up, spacing them evenly apart.
13.Let the buns rise in a warm, draft-free place for 20-30 minutes until they have doubled in size.
14.Bake the buns for 25-30 minutes, or until golden brown on top and cooked through.
