Ingredients

1 head cabbage , cut into small wedges
1 jar sauerkraut , drained and rinsed
6 slices bacon , cut into 2-inch pieces
1 can chopped tomatoes ( DO NOT drain ) or 2 -3 chopped fresh tomatoes ( DO NOT drain )
1 cup uncooked barley

Instructions

1.In a large pot, cook bacon until crispy. Remove bacon, leaving the fat in the pot
2.Add the cabbage and saute for 5-7 minutes until wilted
3.Add the sauerkraut, chopped tomatoes, barley, and 6 cups of water
4.Bring the mixture to a boil, then reduce heat and simmer for 1-2 hours until the barley is cooked and the vegetables are tender
5.Season with salt and freshly ground black pepper to taste
6.Serve hot topped with crispy bacon pieces
