6 prawns
2 -3 garlic cloves
juice of half a lemon
2 tablespoons tomato puree
1 can , pomodori pelati
2 -3 cl white wine
300 ml cream
origan thyme , basil , parsley , rosemary
olive oil , extra virgin
salt & pepper

Instructions

1.Clean and devein prawns, set aside.
2.In a pan, add a drizzle of olive oil with one clove of minced garlic. Slightly roast garlic and add tomato puree.
3.Squeeze half a lemon and add canned tomatoes. Cook for a few minutes.
4.On high heat, deglaze with 2 or 3 dashes of white wine, add herbs and cook for 1 or 2 minutes.
5.Add prawns to the pan and cook until they turn pink, for about 3 to 4 minutes.
6.Finish by pouring cream into the pan, salt to taste and let reduce for 1 or 2 minutes.
7.Serve hot with some bread or as an accompaniment to fresh pasta or rice.
