Ingredients

2 tablespoons sugar
1/2 cup dry white wine
1 large orange , juice of ( generous 1/3 cup )
1 lb sea scallops ( I use large shrimp )
1/2 - 1 tablespoon olive oil
salt and fresh ground white pepper
1 tablespoon cold butter , cut into 3 pieces

Instructions
