Instructions

1.Preheat oven to 375°F.
2.In a pan, heat the butter and sauté the cabbage over medium heat for 5 minutes.
3.Boil the potatoes and leek until soft. Drain and mash with milk, nutmeg, salt, and pepper to make the Colcannon.
4.In another pan, cook the scallops and bay leaf in milk until soft. Remove scallops from the milk and reserve the milk.
5.Cook the leek in butter until soft. Add flour, garlic, chili pepper flakes, whiskey, and scallop milk. Stir to form a smooth sauce.
6.Add scallops, mushrooms, and peas to the sauce. Season with salt and pepper.
7.Spread the Colcannon over the sautéed cabbage. Pour the scallop mixture on top and brush with melted butter.
8.Bake for 30-35 minutes. Garnish with parsley and serve hot.
