Ingredients

6 ounces oka cheese , sliced
6 tablespoons butter
8 ounces mushrooms , sliced
20 very large fresh sea scallops
2 shallots , finely chopped
1/4 cup white wine
2 tablespoons orange juice
2 tablespoons lemon juice
2 tablespoons oranges , lemon and lime zest , finely grated
1/4 cup 15 % cooking cream ( half and half cream )
1/2 cup butter , diced
salt & freshly ground black pepper , to taste
thin strips orange , lemon and lime zest , blanched
1 tablespoon chives , finely chopped
Scallops 'au gratin' is a classic French dish that combines tender scallops with a rich and creamy mushroom sauce. This recipe takes it one step further by topping the scallops with oka cheese, a mild and nutty Canadian cheese. Instructions

1.Preheat oven to 375°F (190°C).
2.In a large sauté pan, melt 6 tablespoons of butter over medium heat.
3.Add the sliced mushrooms and cook until they release their liquid and it has evaporated, approximately 8-10 minutes.
4.Add in the finely chopped shallots and continue to cook for another 2-3 minutes.
5.Pour in the white wine, orange juice, and lemon juice and let it reduce until approximately 50% remains.
6.Mix in the finely grated orange, lemon, and lime zest.
7.Turn off heat and stir in the 15% cooking cream.
8.Season the scallops with salt and freshly ground black pepper.
9.In a separate skillet over high heat, quickly sear the scallops in the diced butter, approximately 30-45 seconds per side.
10.Remove scallops from the heat and place them into a single layer in an 8x8 inch (20x20 cm) ovenproof dish.
11.Pour the mushroom sauce over the scallops, making sure that they are well covered.
12.Top the scallops with the sliced oka cheese.
13.Bake for approximately 6 minutes or until cheese is melted and slightly brown.
14.Garnish with blanched orange, lemon, and lime zest strips and finely chopped chives.
