Ingredients

1 eggplant , medium to large , peeled and sliced thin
1 large onion , thinly sliced
8 -10 russet potatoes , thinly sliced
4 tablespoons butter or 4 tablespoons margarine
4 tablespoons flour
5 cups milk
4 cups cheese , I used 1 pkg Kraft Tex Mex pre-shredded
2 cups parmesan cheese , I used 1 pkg Kraft pre-shredded
1 teaspoon salt ( to taste )
1 tablespoon pepper ( to taste )
4 tablespoons garlic powder ( to taste )
Scalloped Potato Surprise combines creamy, cheesy layers of sliced potatoes, caramelized onions, and eggplant. It's a rich and flavorful take on a classic recipe that is perfect for a comforting dinner on a cold night. Instructions

1.Preheat oven to 350 degrees F.
2.In a large pot, boil sliced potatoes for 5-7 minutes or until slightly tender. Drain and set aside.
3.Melt butter in a pan and add onions, saute until caramelized. Set aside.
4.In a separate pan, whisk together flour and milk until thickened.
5.Add in 3 cups of Tex Mex cheese, parmesan cheese, salt, pepper, and garlic powder. Mix until cheese is melted.
6.Layer half of the sliced potatoes into a large baking dish.
7.Pour half of the cheese sauce, spreading it evenly across the potatoes.
8.Layer eggplant slices on top of the cheese sauce. Followed by the caramelized onions.
9.Repeat layering with the remaining potatoes then cheese sauce.
10.Top with remaining cup of Tex Mex cheese.
11.Bake for 50-60 minutes or until the cheese on top is brown and bubbly.
