Ingredients

1 1/2 lbs ground beef or 1 1/2 lbs ground lamb
1 medium onion , chopped
1/4 cup fresh parsley , chopped
1 garlic clove
1 teaspoon cinnamon
1/2 teaspoon allspice
1/4 cup raisins , soaked in enough hot water to cover
2 eggs , lightly beaten
1 tablespoon olive oil
2 medium yellow onions , sliced
1/2 lb mushroom , sliced
1/4 cup pine nuts
1/2 teaspoon nutmeg
1 1/2 lbs fresh spinach or 1 1/2 lbs frozen spinach
2 eggs , lightly beaten
8 matzos
2 cups chicken broth , heated
2 eggs
1/4 - 1/2 cup chicken broth , room temperature
Scacchi, also known as Passover Lasagna, is a traditional Italian-Jewish dish that is typically served during the Passover holiday. Instructions

1.Preheat the oven to 375°F.
2.In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef or lamb and cook until browned.
3.Add the onion, parsley, garlic, cinnamon, and allspice to the skillet and cook for another 5 minutes.
4.Drain the raisins and add them to the skillet. Cook for an additional 5 minutes.
5.In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced onions and mushrooms, and cook for 5 minutes.
6.Add the pine nuts and nutmeg to the skillet and cook for another 5 minutes.
7.If using fresh spinach, cook in a pot with 1 cup of water until wilted. Drain and chop. If using frozen spinach, thaw and squeeze out excess water.
8.In a large mixing bowl, combine the ground meat mixture, cooked onions and mushrooms, chopped spinach, and 2 beaten eggs.
9.In a separate bowl, mix together 2 eggs and 1/4-1/2 cup of chicken broth to make an egg wash.
10.Dip 4 matzos one at a time in the hot chicken broth, and then arrange them in a greased 9x13 inch baking dish.
11.Spread half of the meat mixture over the matzos, and then top with 4 more soaked matzos.
12.Repeat with the remaining meat mixture, and then top with the remaining 4 matzos.
13.Brush the top with the egg wash, and then bake in the preheated oven for 45-50 minutes until golden brown.
