Ingredients

165 g semolina
125 ml plain yogurt
125 ml water
1 1/2 cups frozen peas , defrosted
2 tablespoons chopped onions
1 small carrot , peeled and grated
2 1/2 cm fresh ginger , peeled and crushed
3/4 - 1 teaspoon red chili powder
1/2 teaspoon ground turmeric
salt , to taste ( season well )
3 tablespoons oil , plus extra for greasing
1 teaspoon mustard seeds
1/2 teaspoon cumin seed
1 teaspoon sesame seeds
1/2 teaspoon bicarbonate of soda

Instructions

1.Preheat the oven to 200°C/180°C fan/gas mark 6.
2.Mix together the semolina, yogurt and water to make a smooth batter, then add the peas, onion, carrot, ginger, chilli powder, turmeric and salt.
3.Heat the oil in a small pan until hot, then add the mustard seeds, cumin seeds and sesame seeds.
4.Fry for 1 minute, taking care not to burn the spices.
5.Stir the fried spices into the semolina mixture, then add the bicarbonate of soda and stir well. Leave the batter to rest for 10 minutes.
6.Grease a 900g loaf tin with oil, then pour in the batter.
7.Bake in the oven for 40-45 minutes until brown.
8.Remove from the oven and leave to cool in the tin for 5 minutes, then turn out onto a wire rack to cool completely.
