Ingredients

1 large potato
2 eggs
6 -8 slices bacon
1/2 red pepper , finely chopped
4 mushrooms , sliced ( preferrably chestnut )
1 small red onion , finely chopped
2 cloves garlic , minced
10 cm length cucumbers , finely chopped
3 -4 tablespoons olive oil
1 -2 teaspoon mustard
200 g mixed salad greens
2 tablespoons chives , finely chopped
2 tablespoons of fresh mint , finely chopped
pepper , to taste
Savoury Salad -- a la Francaise is a French-inspired salad with a unique blend of flavors and textures. Instructions

1.Cut the potatoes into bite-sized pieces and boil in salted water until tender. Drain and let cool.

3.Fry the bacon in a frying pan until crispy. Drain on kitchen paper and chop.
4.In the same pan, add the red pepper, mushrooms, red onion and garlic with a little olive oil. Cook until softened.
5.Add the chopped cucumber and mix.
6.In a small bowl, whisk together the mustard and remaining olive oil.
7.In a large bowl, toss the mixed salad greens with the cooked ingredients, bacon, and dressing. Sprinkle with chopped chives, fresh mint, and black pepper to taste.
