Ingredients

3 tablespoons olive oil
1 garlic clove , sliced
1 1/2 lbs pumpkin flesh , cut into 3/4 inch chunks
12 ounces potatoes
2 tablespoons butter
1/2 cup ricotta cheese
2/3 cup parmesan cheese , grated
1/4 teaspoon nutmeg , grated
3 large eggs , separated
salt & freshly ground black pepper
fresh parsley , chopped for garnish

Instructions

1.Preheat oven to 400°F (200°C). Grease a 9-inch (23cm) baking dish.

5.Mix in ricotta cheese, parmesan cheese, grated nutmeg, and salt and pepper to taste
6.In a separate bowl, whisk egg yolks until light and frothy. Stir into the potato mixture until well combined.
7.In a separate bowl, beat egg whites until stiff peaks form. Gently fold into the potato mixture.
8.Pour mixture into the prepared baking dish, smooth the top with a spatula, and bake for 30-40 minutes until golden.
