1/2 cup apricot preserves
2 tablespoons prepared mustard
1 tablespoon apple cider vinegar
1/2 lb smoked ham , chopped
1 1/2 cups shredded swiss cheese
8 puff pastry sheets , 5 x 5 inches ( purchased or home-made from a standard recipe )
1 egg white
1 cup canned whole berry cranberry sauce
7 tablespoons red jelly or 7 tablespoons jam , such as currant , cherry , raspberry or strawberry
2 -3 tablespoons brown sugar , to desired sweetness
1 ounce fresh peeled gingerroot , to taste

Instructions

1.In a small pot, add apricot preserves, prepared mustard, and apple cider vinegar. Cook over low heat while stirring occasionally for 5 minutes or until the preserves melt into a sauce. Set aside to cool.
2.Preheat oven to 400°F. Line baking sheets with parchment paper.
3.In a medium bowl, mix chopped ham and shredded Swiss cheese. Set aside.
4.Lay the puff pastry sheets on a lightly-floured board and cut each sheet into 9 (3 x 3-inch) squares.
5.In a small bowl, beat the egg white and brush each square with egg white. Spoon a tablespoon of ham and cheese mixture onto the center of each square.
6.Take the opposite corners of each puff pastry square and bring them together in the center. Squeeze the dough to seal the edges. Brush each puff with more egg white.
7.Place the puffs onto a prepared baking sheet and bake for 20 to 25 minutes or until golden brown.
8.In a separate pot, combine the whole berry cranberry sauce, red jelly or jam, brown sugar, and peeled gingerroot. Cook over low heat and stir for 5 minutes until the ingredients meld together. Set aside to cool.
