220 g creamed corn ( approx 1/2 lge can )
4 chopped spring onions
1/2 teaspoon chopped garlic
2 teaspoons mustard powder

Instructions

1.In a large mixing bowl, combine the self-raising flour, nonfat dry milk powder, and salt.
2.In a separate bowl, whisk together the eggs and water until well combined.
3.Add the wet ingredients to the dry ingredients and stir until just combined.
4.Fold in the creamed corn, spring onions, chopped garlic, and mustard powder.
5.Heat a non-stick frying pan over medium heat and add enough oil to lightly coat the bottom.
6.Spoon ¼ cup of the batter for each pikelet onto the pan, and cook until bubbles form on the surface and the edges are set, then flip and cook until golden.
7.Serve hot with your favourite toppings.
