1/4 cup heavy cream
1/4 cup dry white wine
1 large egg yolk

3/4 cup cold butter , cut into bits
2 large eggs , beaten lightly
1/4 cup sliced almonds , toasted lightly
1 large egg yolk
1 tablespoon water

Instructions

2.In a large bowl, whisk together the 3 cups flour, sugar, and salt. Add the butter and blend the mixture until it resembles coarse meal. Add the eggs and 1/4 cup water, toss the mixture until it forms a dough, and knead the dough lightly until smooth.
3.Roll the dough into a 15-inch round on a floured surface, transfer it to a large baking sheet and spread the cheese filling over the dough.
4.Fold the edges of the dough up over the filling and brush the edges with the egg yolk mixture. Sprinkle the almonds over the edges and bake the galette in a preheated oven at 375F for 25-30 minutes, or until the crust is golden brown. Let it cool, and serve with red grapes.
