Ingredients

3 cups fiddleheads
2 tablespoons butter
2 cups sliced mushrooms

6 ounces crusty baguette , day old , cut in 1/2 inch rounds or 6 ounces other crusty bread , cubed
1 cup Fontina cheese , shredded ( or Oka )
2 tablespoons fresh herbs ( tarragon , basil , chives , chervil )
This Savoury Bread Pudding with Fiddleheads & Mushrooms is a comforting and healthy meal, perfect for a cozy weekend dinner. Instructions

1.Preheat oven to 375°F.
2.Cut off the woody ends of fiddleheads and rinse well in cold water. Boil them in salted water for 10 minutes. Drain and rinse under cold water. Cut them into 1-inch pieces.
3.Heat butter in a frying pan and sauté mushrooms and onions until mushrooms are brown. Add salt and pepper to taste.
4.Whisk eggs and milk together. Add salt and pepper.
5.Arrange baguette slices in overlapping lines on the bottom of a baking dish. Add fiddleheads, mushrooms, onion, and Fontina cheese. Pour egg mixture over the top, press the bread down and allow it to soak the liquid for 10 minutes.
6.Bake the pudding for 30 to 35 minutes, until the top is golden and the pudding has set. Let it sit for 5 minutes.
7.Garnish with herbs and serve hot.
