Ingredients

2 1/2 cups dashi
4 teaspoons sake , divided
2 1/2 teaspoons light soy sauce , divided
1 teaspoon salt
6 ounces skinned and boneless chicken
8 medium shrimp , shelled ( tails intact )
8 small fresh shiitake mushrooms ( or 4 medium )
1 small carrot , pared
2 ounces spinach
1/4 cup water
1 piece lemon rind , cut into 1/16-inch strips
4 large eggs
3 -4 cups boiling water
Chawan Mushi is a popular Japanese appetizer that is steamed and served hot in small cups. It is made with a mixture of eggs, dashi, and other ingredients such as mushrooms, shrimp, and vegetables. Instructions

1.In a large mixing bowl, mix dashi, 2 tsp sake, 2 tsp soy sauce and salt together.
2.Add chicken, shrimp, shiitake mushrooms and carrot to the mixture.
3.In a separate mixing bowl, whisk eggs well, and then pour them into a measuring cup.
4.Fill four heatproof tea cups with chicken and vegetable mixture.
5.Pour egg mixture into the cups of chicken and vegetable mixture.
6.Cover the cups with aluminum foil and place them into a wooden steamer basket.
7.Place the basket in a baking dish filled with boiling water.
8.Cover the dish with aluminum foil and steam the cups for 15-20 minutes.
9.Meanwhile, blanch spinach in boiling water for 30 seconds before chopping it into small pieces.
10.Combine spinach with sliced lemon rind, 1/4 cup water, 2 tsp sake and 1/2 tsp soy sauce.
11.Serve the steamed egg custard with spinach mixture.
