3/4 cup gruyere cheese ( shredded coarsley )
1 egg yolk ( beaten and 1 T. water added to glaze loaf with )
cornmeal

Instructions

1.In a large bowl, mix bread flour, whole wheat flour, salt, minced garlic, potato flakes and yeast together.
2.Beat egg, milk and butter together, then add to the dry ingredients and mix well.
3.Add shredded gruyere cheese and stir to combine.
4.Knead dough on a floured board for 6-8 minutes, then place in a greased bowl and cover.
5.Let rise in a warm place for 1 hour.
6.Punch dough down and shape into a large ball, then place on a greased baking sheet sprinkled with cornmeal.
7.Cover and let rise for another hour.
8.Brush loaf with egg yolk and water mixture.
9.Preheat oven to 375 degrees F and bake for 35-45 minutes or until bread is golden brown.
