Ingredients

4 -6 medium fresh zucchini
1 cup water
1 lb bulk sausage ( I use the sage sausage or ground italian sausage )
1/2 cup chopped onion
2 tablespoons minced garlic
2 slightly beaten eggs
1 cup Italian breadcrumbs
1 cup shredded mozzarella cheese
1/2 cup parmesan cheese
1/2 teaspoon salt
1 teaspoon dried thyme
1/2 teaspoon pepper

Instructions

1.Preheat oven to 375F.
2.Cut off the ends of the zucchini and halve them lengthwise.
3.Scoop out the center of each zucchini half and place them in a baking dish lined with 1 cup of water.
4.Brown the bulk sausage over medium heat in a skillet for 5 minutes, breaking it into small pieces.
5.Add onion and garlic, and cook for another 3 minutes.
6.Drain any grease from the pan and add the beaten eggs, Italian breadcrumbs, shredded mozzarella cheese, parmesan cheese, salt, dried thyme, and pepper. Mix well.
7.Fill each zucchini half with the sausage mixture.
8.Sprinkle paprika on top of the stuffed zucchini.
9.Bake for 35-40 minutes.
