Ingredients

1 eggplant , halved lengthwise
1 tablespoon olive oil
1/2 pound bulk Italian sausage
1/4 teaspoon garlic powder
1/4 teaspoon dried Italian seasoning
1/8 teaspoon black pepper
2 tablespoons dry bread crumbs
2 cups spaghetti sauce , divided
1 cup mozzarella cheese , divided
1 egg , beaten
Sausage-Stuffed Eggplant is a classic dish that combines the rich flavors of Italian sausage with the light, tender texture of eggplant. Instructions

1.Preheat the oven to 375°F (190°C).
2.With a spoon, scoop out the eggplant flesh leaving about 1/4 inch thickness on the skin and set the eggplant shells aside.
3.In a large skillet, heat the olive oil over medium heat and crumble the sausage into the skillet, cooking until browned and cooked through.
4.Add garlic powder, Italian seasoning, black pepper, bread crumbs, 1 cup spaghetti sauce and 1/2 cup mozzarella cheese to the skillet, stirring to combine.
5.Simmer the mixture for 2-3 minutes until the cheese is melted and the mixture is heated through.
6.Stuff the hollowed eggplant shells with the sausage mixture, dividing it evenly among the shells.
7.In a small bowl, beat the egg and mix in the remaining spaghetti sauce.
8.Pour the sauce mixture over the stuffed eggplants, filling up the eggplants until 2/3 full.
9.Sprinkle the remaining cheese over the eggplant tops.
10.Bake the stuffed eggplants for 25-30 minutes until the cheese is melted and bubbly and the eggplants are tender.
