Ingredients

1/4 cup olive oil
500 g gourmet peppered beef sausages
1 red onion , halved , thinly sliced
2 garlic cloves , crushed
1 green capsicum , thinly sliced
700 g italian tomato passata ( see note )
500 g risoni pasta
1 tablespoon oregano leaves , chopped
80 g baby rocket
25 g parmesan cheese , shaved

Instructions

1.In a large pot of salted boiling water, cook risoni pasta until al dente. Drain and toss with a little oil to keep it from sticking together.
2.Meanwhile, heat olive oil in a large pan over medium high heat and cook beef sausages until browned and cooked through. Remove from pan and slice into bite-size pieces.
3.In the same pan, sauté onion and garlic until soft. Add sliced capsicum and continue cooking for another 3 minutes.
4.Pour in tomato passata and bring to a boil. Reduce heat and let simmer for 10 minutes.
5.Toss the cooked pasta with the sausage slices, sauce, oregano leaves, and baby rocket. Season with salt and pepper to taste.
6.Serve topped with shaved parmesan cheese.
