Ingredients

1 lb plain Italian sausage
2 tablespoons olive oil
2 garlic cloves , minced
1/2 cup dry white wine
3 lbs fresh plum tomatoes , peeled , seeded , and chopped ( or 28 oz . can imported Italian peeled tomatoes with their juice , passed through a food mill )
salt
fresh ground black pepper
3 -4 fresh basil leaves , torn into bits

Instructions

1.Begin by cooking the Italian sausage in a large skillet over medium heat for about 10-12 minutes or until it is nicely browned. Use a slotted spoon to remove the sausage from the pan and place it on a paper towel.
2.In the same skillet, add olive oil and garlic and cook for about 30 seconds until the garlic is fragrant.
3.Pour in the white wine and let it simmer for about 3-4 minutes or until it reduces by half.
4.Add in the peeled, seeded and chopped plum tomatoes or canned tomatoes to the skillet and stir until well combined.
5.Add salt and black pepper to taste and let the sauce simmer for about 15-20 minutes or until it thickens.
6.Stir the cooked sausage into the sauce and let it simmer for another 5-10 minutes.
7.Add fresh basil leaves and stir into the sauce. Serve hot over pasta or with crusty bread.
