3 lbs cabbage , sliced
8 ounces thick sliced smoked bacon
3 onions , thinly sliced
1 cup chicken stock
1/4 cup white wine
2 tablespoons sugar
2 tablespoons oil
salt and white pepper
1 teaspoon cumin
1 bay leaf

Instructions

1.Preheat the oven to 325°F (162°C).
2.In a large Dutch oven or oven-safe pot with a lid, heat the oil over medium-high heat. Add the bacon and cook until brown and crispy.
3.Remove the bacon from the pot and set it aside on a paper towel-lined plate to cool. Leave the bacon fat in the pot.
4.Add the onions to the pot and cook, stirring occasionally, until soft and translucent, about 5 minutes.
5.Add the sliced cabbage, chicken stock, white wine, sugar, salt, white pepper, cumin, and bay leaf to the pot. Stir everything together until well combined.
6.Cover the pot with the lid and transfer it to the oven. Bake for 2 hours, stirring occasionally, until the cabbage is tender and the liquid has reduced slightly.
7.Remove the pot from the oven and discard the bay leaf. Crumble the cooled bacon over the top of the cabbage and stir everything together until well combined. Serve immediately.
