Ingredients

1 boneless beef rump roast
4 cups water
2 cups red wine vinegar
2 tablespoons sugar
1/2 cup onion , finely chopped
3/4 cup celery , finely chopped
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 teaspoon pickling spices
2 tablespoons vegetable shortening
24 crushed gingersnaps

Instructions

1.In a large pot, combine the water, red wine vinegar, sugar, onion, celery, salt, pepper, and pickling spices and bring to a boil.
2.Add in the beef rump roast and reduce the heat to a simmer.
3.Cover the pot and let the meat simmer for 2-3 hours or until fork-tender.
4.Remove the beef from the pot and set aside.
5.In a separate pan, heat up the vegetable shortening and add in the crushed gingersnaps, stirring constantly until the mixture thickens.
6.Slowly pour in some of the liquid from the pot and stir until the mixture is smooth.
7.Return the beef to the pot and pour the gingersnap gravy over the beef.
8.Simmer for another 10-15 minutes until the gravy thickens and the beef is completely coated.
