Ingredients

1 cup vinegar ( I use red wine vinegar )
1 1/4 cups water
1 cup sugar
2 tablespoons pickling spices ( original recipe just says mixed spices )
1 tablespoon juniper berries ( optional , my addition )
1 onion , sliced
2 -4 lbs boneless beef roast ( rump , bottom or top round , or chuck boneless shoulder will do . )
shortening
ginger snaps ( for gravy )

Instructions

1.In a stockpot, combine the vinegar, water, sugar, pickling spices, juniper berries, and sliced onion.
2.Add the beef roast to the pot, ensuring that it's fully submerged in the liquid.
3.Cover and refrigerate for 2-3 days, turning the meat occasionally.
4.After the marinating process, remove the meat from the liquid and pat it dry.
5.In a large pan, brown the meat in shortening on all sides.
6.Pour the marinade liquid into the pan and bring it to a boil.
7.Cover the pan and simmer for about 3 hours or until the meat is tender.
8.To make the gravy, crush ginger snaps and add to the gravy while it cooks until the gravy thickens. Strain the gravy and serve with the sauerbraten.
