Ingredients

1 1/2 cups vegetable shortening
1 cup brown sugar
1 cup white sugar

1 tablespoon vanilla ( I use good Mexican )
2 cups mashed ripe bananas
2 cups whole wheat flour ( Can use white as well )
1 1/2 cups white flour
4 teaspoons baking powder
1 teaspoon salt
1 cup pecans ( optional )
1 cup chocolate chips ( optional )

Instructions

1.Preheat oven to 350°F (175°C).
2.In a large bowl, cream the shortening and sugars until light and fluffy.
3.Add eggs, one at a time, beating well after each addition.
4.Beat in vanilla and mashed bananas.
5.In another bowl, whisk together the whole wheat flour, white flour, baking powder, and salt.
6.Gradually add the dry ingredients to the creamed mixture, mixing well.
7.Fold in the pecans and chocolate chips, if using.
8.Pour batter into two greased 9x5-in. loaf pans.
9.Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
10.Cool for 10 minutes before removing from pans to wire racks to cool completely.
