Ingredients

1 1/2 cups finely crushed blue tortilla chips
1/4 cup butter , softened
2 packages cream cheese , softened
2 cups shredded monterey jack cheese
1/4 teaspoon salt
3 containers sour cream , divided
3 large eggs
1 cup thick & chunky salsa
1 can chopped green chilies , drained
1 cup guacamole ( thawed if frozen )
1 medium tomatoes , seeded and diced

Instructions

1.Preheat oven to 325°F.
2.Mix crushed tortilla chips and butter in a bowl to form the crust.
3.Press onto the bottom of a 9-inch springform pan.
4.Bake for 10 minutes. Let it cool.
5.In a large mixing bowl, combine cream cheese, monterey jack cheese, and salt.
6.Beat with a mixer on medium speed until well combined.
7.Add 2 containers of sour cream and beat again.
8.Beat in eggs one at a time until just combined.

11.Spread the remaining cheese mixture over the salsa.
12.Bake for 40 minutes until almost set. Remove from oven.
13.Let it cool for 10 minutes.
14.Mix 1 container of sour cream and guacamole in a bowl.
15.Spread the mixture over the cheesecake.
16.Bake for 10-15 minutes longer to set.
17.Remove from oven and let it cool to room temperature.
18.Put in refrigerator for at least 4 hours or overnight.
19.Top with diced tomatoes and serve with tortilla chips or crackers.
