Ingredients

1 lb spinach , washed and chopped fine
1 lb mustard greens , washed and chopped fine
2 green chilies , chopped and deseeded
1 tablespoon fresh ginger , grated
1 tablespoon garlic , grated
salt , to taste
3 tablespoons ghee
1 large onion , grated
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala powder
3 tablespoons lemon juice or 3 tablespoons lime juice
1 tablespoon cornstarch
Sarson Ka Saag is a classic Punjabi dish that holds a special place in every household of Punjab, India. Instructions

1.In a large pot of salted boiling water, add the spinach and mustard greens and cook until wilted.
2.Remove from heat and drain the water. Allow greens to cool.
3.In a blender, blend the greens along with ginger, garlic, and green chilies to form a thick paste.
4.Heat ghee in a deep-bottomed skillet, add grated onions and allow them to cook until golden brown.
5.Add the green paste in the skillet and allow it to cook for around 10 minutes, stirring in between.
6.Add salt, coriander powder, cumin powder, and garam masala powder to the skillet and mix well.
7.Dilute cornstarch in water and mix into the skillet while continuously stirring.
8.Cook for another 5 minutes and add lemon juice.
9.Serve hot with rice or Indian bread.
