Ingredients

2 large dried red chile peppers ( optional )
2 bunches fresh spinach , washed and chopped
1 bunch mustard greens , washed and chopped
2 tablespoons ghee ( clarified butter )
1/2 teaspoon cumin seeds
1/4 cup finely chopped onion
1/2 teaspoon ginger paste
2 teaspoons garlic paste
1/2 tomato , chopped
salt to taste
1/2 teaspoon white sugar , or to taste
1/4 cup water ( optional )
Sarson Ka Saag is a classic dish from Northern India that is loved for its flavorful and nutritious profile. Instructions

1.In a large pot, boil the spinach and mustard greens until they are fully cooked.
2.Once cooked, strain the greens and puree them in a blender.

4.Once the cumin seeds start to splutter, add the finely chopped onions and sauté them until they become translucent.
5.Then, add ginger paste and garlic paste, and cook for a few minutes.
6.Add chopped tomatoes and cook until they are soft and mushy.
7.Add the pureed greens to the pan and mix well.
8.Add salt and sugar to taste, and cook for a few more minutes.
9.If the saag is too thick, add water until it reaches your desired consistency.
