Ingredients

4 oo grams sardine fish
1/2 teaspoon mustard seeds
1/4 - 1/2 teaspoon ground fenugreek
1 red chili
2 green chilies , sliced vertically
8 -10 shallots , sliced ( small onions )
5 garlic cloves , chopped
1 teaspoon ginger , julienned
1 tomatoes , sliced ( optional )
1 1/2 teaspoons chili powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
2 sprigs curry leaves
1 1/2 tablespoons coconut oil
salt
1 cup water

Sardine fish curry, also known as Kerala Style Mathi Curry or Chaala Curry, is a spicy and flavorful dish from the southern Indian coastal state of Kerala. Instructions

1.Clean and wash the sardine.
2.In a pan, heat 1.5 tablespoons of coconut oil over medium heat.
3.Add 1/2 teaspoon of mustard seeds and stir until they begin to pop, then add 1/4-1/2 teaspoon of ground fenugreek and 1 red chili.
4.Once the spices are fragrant, add 8-10 sliced shallots, 5 chopped garlic cloves, 1 teaspoon of julienned ginger, and 2 sliced green chilies.
5.Fry for a few minutes until the shallots turn golden brown.
6.Add 1 1/2 teaspoons of chili powder, 1 teaspoon of coriander powder, and 1/2 teaspoon of turmeric powder. Fry for a minute or two.
7.Add 1 1/2 to 2 cups of water, 2 sprigs of curry leaves, 1 sliced tomato (optional), and salt to taste.
8.Bring the mixture to a boil, then reduce the heat and add the sardines. Cover and let cook for around 10-15 minutes until the fish is cooked through.
9.Serve hot with rice or dosa.
