Ingredients

8 ounces linguine ( I love whole wheat for this , but not necessary )
8 ounces asparagus , ends removed and cut in 1-inch pieces on an angle
4 ounces smoked turkey , julienned ( Purchase one piece from the Grocery Deli about 1/4-inch thick and then cut in thin strips )
1 cup sliced mushrooms
2 shallots , fine diced
2 garlic cloves , fine diced
2 large eggs
3 large egg whites
1/3 cup milk ( I used whole , but even 2 % will work )
3 tablespoons parmesan cheese , fine grated
2 tablespoons fresh parsley , fine chopped
1 pinch nutmeg ( fresh grated if possible )
1 pinch red pepper flakes
1 tablespoon olive oil
salt
pepper
fresh ricotta cheese ( or a good store bought )
parmesan cheese

Instructions

1.Cook linguine according to package instructions, adding asparagus in the last 3 minutes of cooking. Drain and reserve.

3.In a large skillet, heat olive oil over medium heat. Add turkey, mushrooms, shallots, and garlic. Cook until turkey is lightly browned and mushrooms are tender.
4.Add linguine and asparagus to skillet and toss to combine with turkey and mushroom mixture.
5.Remove skillet from heat and pour egg mixture over pasta, stirring quickly to coat and cook eggs. The heat of the pasta will cook the eggs. Do not overcook.
6.Serve hot with a dollop of fresh ricotta and additional parmesan cheese, if desired.
