1 tablespoon olive oil

Instructions

1.Peel and cut the potatoes into quarters, and place them in a pot of salted boiling water.
2.Cook the potatoes for 15-20 minutes, or until they are soft and tender when pierced with a fork. Drain the potatoes and return them to the pot.
3.Add butter, milk, and eggs to the potatoes, and mash them until creamy. Season with salt and pepper.
