4 -5 eggplants , sliced into 8mm rounds
1 kg ground beef
3/4 cup olive oil
3 tomatoes , diced
1 can diced tomatoes
4 large onions , diced
4 garlic cloves , crushed
3 bay leaves
1/3 cup fresh parsley , finely chopped
1/4 cup fresh basil , chopped
1 teaspoon dried oregano
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
2 tablespoons beef stock , paste
3/4 cup parmesan cheese , shredded
1 1/2 cups plain flour

2 eggs , lightly beaten
1 cup parmesan cheese

Moussaka is a traditional dish in the Mediterranean and Middle Eastern cuisines. It consists of layers of eggplant, ground meat, and creamy bechamel sauce baked to perfection in the oven. Sara's Moussaka is a variant of this classic recipe using eggplants as the main ingredient instead of potatoes. The savory flavor of ground beef combined with the sweetness of tomatoes and eggplants, topped with a creamy bechamel sauce, creates a perfect harmony of flavors that will leave you wanting more.

Instructions

1.Preheat oven to 180°C.
2.Heat some of the olive oil in a large frying pan and cook the eggplant slices until lightly browned on each side.
3.In the same pan, add onions and tomatoes and cook until softened, then add garlic and cook for another minute.
4.Add the ground beef, breaking it up with a spoon, and brown until crumbly and cooked through.
5.Stir in the bay leaves, fresh herbs, spices, canned tomatoes, beef stock paste and salt and cook for 30 minutes or until fragrant.
6.To make the bechamel sauce, melt butter in a medium saucepan over medium heat.
7.Stir in flour and cook for 2 minutes while whisking continuously.
8.Gradually whisk in milk and cook, stirring continuously, until the mixture thickens and comes to a boil.
9.Remove from heat and let cool slightly.
10.Add beaten eggs, parmesan cheese, salt, pepper and nutmeg, and whisk until smooth.
11.To assemble the moussaka, put a layer of eggplant slices at the bottom of a greased baking dish.
12.Spoon half of the beef mixture over the eggplant slices and top with another layer of eggplant slices.
13.Repeat with remaining beef mixture and eggplant slices, ending with eggplant slices on top.
14.Pour the bechamel sauce evenly over the top of the eggplant slices.
15.Sprinkle with parmesan cheese.
16.Bake for 40-45 minutes or until the top is golden and bubbling.
