1 tablespoon butter ( can substitute with margarine )

Instructions

1.Preheat oven to 180°C.
2.Mix the sugar, bicarbonate of soda, self raising flour and mixed dried fruit in a large mixing bowl.
3.Melt the butter in the boiling water and add to the bowl, mixing well to combine.
4.Pour the mixture into a lined loaf tin, smoothing the surface with a spoon as necessary.
5.Bake for 45-50 minutes, or until fully cooked through in the center.
6.Remove from oven and let cool before slicing and serving.
