Ingredients

1 egg white
1/2 cup sugar
1 package blanched slivered almonds , pulverized in a blender
1 tablespoon cornstarch
1 teaspoon almond extract
1 cup semi-sweet chocolate chips
1/3 cup butter
1 egg
1 teaspoon grated fresh lemon rind
1 teaspoon sugar
1 teaspoon vanilla
12 blanched almonds

Instructions

1.Preheat oven to 350°F (175°C)
2.In a mixing bowl, beat the egg white until stiff. Gradually mix in the sugar, blending well after each addition
3.Fold in the pulverized almonds, cornstarch, and almond extract
4.Drop the mixture by rounded teaspoons onto a greased baking sheet. Place an almond on top of each mound
5.Bake for about 12-15 minutes or until the edges are slightly golden brown
6.In a saucepan, melt the chocolate chips with the butter over low heat. Remove from heat and stir in the egg, lemon rind, sugar, and vanilla
7.Spread the chocolate mixture over the cooled cookies and chill until firm
8.In a mixing bowl, beat the egg white until stiff. Gradually mix in the sugar, blending well after each addition
9.Add the vanilla
10.Drop by rounded teaspoons onto a foil-lined baking sheet
11.Bake at 375° for 8 minutes or until golden brown. Cool
12.Roll the cookies into powdered sugar
13.Top each chocolate-covered cookie with a meringue cookie
14.Chill until ready to serve
