Ingredients

6 ounces Hatch chile peppers , halved and seeded
3 tablespoons corn oil
1 cup chopped onion
2 teaspoons minced garlic
2 tablespoons all-purpose flour
2 cups beef broth
1 teaspoon salt
Santa Fe Hatch Chile Green Sauce, as you can tell from its name, originates from the Southwestern United States. Instructions

1.Preheat the oven to 375˚F
2.Add the halves of the Hatch chilies to a baking dish, drizzle with 1 tablespoon of corn oil and roast until the chiles are softened and slightly charred, about 20-25 minutes.
3.Allow the chilies cool and then coarsely chop them.
4.In a large saucepan, heat the remaining corn oil over medium-high heat and add the onion and garlic. Cook for 2-3 minutes or until the onions are translucent and tender.
5.Stir in the flour and cook for 1-2 minutes. Gradually whisk in the beef broth, and bring to a boil.
6.Add the roasted chilies and salt, and simmer over low heat for 20 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded.
7.Remove from heat and blend until smooth using an immersion blender or in batches in a regular blender.
8.Use immediately or store in an airtight container (in the fridge) for up to 1 week
